To have launchd start elasticsearch at login:
  ln -sfv /usr/local/opt/elasticsearch/*.plist ~/Library/LaunchAgents
Then to load elasticsearch now:
  launchctl load ~/Library/LaunchAgents/homebrew.mxcl.elasticsearch.plist
Or, if you don't want/need launchctl, you can just run:
  elasticsearch
==> Summary

Won't start...

$ elasticsearch

Likely root cause: java.nio.file.NoSuchFileException: /usr/local/var/lib/elasticsearch/plugins/marvel/plugin-descriptor.properties

And updating marvel? https://www.elastic.co/guide/en/marvel/current/installing-marvel.html

Or just remove it:

cd /usr/local/var/lib/elasticsearch/plugins/
rm -rf marvel


$ brew install elasticsearch
==> Downloading https://download.elastic.co/elasticsearch/elasticsearch/elastics
